This dish is perfect for cold autumn nights and hearty, healthy dinners.
Serves approximately 4 people.
Place the beans in a casserole dish with 1.5 litres of cold water, add the oil and bring to a fast boil. Reduce the heat and allow to simmer gently for approximately three hours. Add more cold water if needed. Once cooked, add the salt and boil for one more minute. Remove from the heat and allow the sauce to thicken.
Serve your Tolosa beans with our cabbage, Beasain black pudding and Ibarra peppers.
